Hulling
Hulling
Hulling is one of the first and most critical stages in pistachio processing. Immediately after harvesting, the outer green husk (hull) is mechanically removed to prevent staining and mold growth. Because pistachios begin to discolor and ferment quickly, hulling must be done within a few hours of harvest to preserve kernel quality, flavor, and appearance. This step ensures a clean shell surface, maintains the natural color of the kernel, and prepares the nuts for washing, drying, and further grading — especially important for export-quality pistachios.

The Flotation Tank is the next essential step after hulling in pistachio processing. In this stage, hulled pistachios are placed into a water tank where natural density differences help separate quality levels. Empty shells and defective nuts float to the surface, while fully developed, heavier pistachios sink. This efficient sorting method improves overall batch quality, removes lightweight or unfilled nuts, and ensures that only premium, well-filled pistachios proceed to drying and final grading; a crucial step for maintaining export standards.
Dryer & Sun drying
Dryer & Sun Drying
Dryer & Sun Drying is a crucial stage that follows flotation in pistachio processing. After washing and separation, pistachios contain surface and internal moisture that must be reduced quickly to prevent mold growth and aflatoxin contamination. In modern facilities, industrial hot-air dryers are used to carefully lower the moisture content to safe storage levels (typically around 4–6%). In traditional methods, pistachios are spread under direct sunlight and turned regularly to ensure even drying. Proper drying preserves flavor, texture, shell color, and overall shelf life — making it a key step for high-quality, export-grade pistachios.
